Ingredients
Method
- Preheat the oven to 300 degrees and place a parchment sheet on a baking pan.
- In a stand mixer, beat egg whites and cream of tartar until stiff peaks form.
- In a separate bowl, whisk together egg yolks, cottage cheese, honey and vanilla until smooth.
- Gently fold egg whites into yolk mixture, keep mixture light and airy.
- Carefully fold in blueberries, keeping mixture light and airy.
- Spoon batter onto baking sheet forming 6 mounds.
- Using the few extra blueberries, place them on top of mounds for added blueberries.
- Bake for 25 to 30 minutes - should be golden and firm.
