Blueberry Cottage Cheese Cloud Bread

Ingredients
  

  • 3 large eggs separated
  • ¼ cup cottage cheese
  • 1 tablespoon of honey
  • ¼ tsp cream of tarter
  • ½ cup blueberries and a few extra for topping bread
  • ½ tsp vanilla extract

Method
 

  1. Preheat the oven to 300 degrees and place a parchment sheet on a baking pan.
  2. In a stand mixer, beat egg whites and cream of tartar until stiff peaks form.
  3. In a separate bowl, whisk together egg yolks, cottage cheese, honey and vanilla until smooth.
  4. Gently fold egg whites into yolk mixture, keep mixture light and airy.
  5. Carefully fold in blueberries, keeping mixture light and airy.
  6. Spoon batter onto baking sheet forming 6 mounds.
  7. Using the few extra blueberries, place them on top of mounds for added blueberries.
  8. Bake for 25 to 30 minutes - should be golden and firm.
