Banana Pudding With White Chocolate Cookies

Ingredients
  

  • ½ cup softened butter
  • ½ cup brown sugar
  • ¼ cup of granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 box 3.4 oz banana cream instant pudding mix
  • 1 ¾ cups of all purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup of white chocolate chips
  • ½ cup crushed vanilla wafers optional for sprinkling on top of cookie

Method
 

  1. Preheat the oven to 350 degrees.
  2. Line baking pans with parchment paper.
  3. Cream butter and both sugars until smooth and fluffy.
  4. Mix in egg, vanilla and pudding mix, blend until smooth.
  5. Mix in flour, baking soda and salt, mix until smooth, no lumps.
  6. Fold in white chocolate chips and form a 2 T size dough ball and place on the pan.
  7. Bake for 10 to 12 minutes.
  8. When removed from the oven, allow to rest on the pan for 3 to 5 minutes and move to the cooling rack.
  9. Store in an airtight container.
