Chicken Pot Pie

Ingredients
  

  • 2 T of butter
  • 2 15 oz cans of mixed vegetables juice drained off
  • 2 t of onion powder
  • 2 t of garlic powder
  • 1 t of dried thyme
  • ¼ cup all purpose flour
  • Salt and pepper to taste
  • 2 cups of chicken broth
  • ½ cup of milk
  • 3 cups shredded cooked chicken or turkey
Quick Biscuits
  • 1 cup of self rising flour
  • 1 tsp garlic powder
  • ½ tsp sugar
  • ¼ tsp salt
  • ½ cup milk
  • ¼ cup melted butter
  • ½ cheddar cheese shredded

Method
 

Filling
  1. Preheat the oven to 400 degrees.
  2. Melt butter in a pot.
  3. Add vegetables, onion powder, garlic powder, thyme, flour, salt and pepper.
  4. Stir until mixed and flour has coated everything.
  5. Add in chicken broth and milk.
  6. Stir and warm until liquid thickens.
  7. Add chicken or turkey and allow to simmer until meat is warmed through.
  8. Remove from heat and set aside.
Quick Biscuits
  1. Mix together flour, garlic powder, sugar and salt.
  2. Add milk and melted butter, stir until combined.
  3. Fold in cheddar cheese.
  4. Pour chicken pot pie filling into a baking pan.
  5. Drop the biscuit mixture by the tablespoon over the chicken pot pie filling leaving about one inch between biscuits.
  6. Bake in a preheated oven for 20 minutes or until biscuits are lightly brown on top.
  7. Remove from the oven and let the dish sit for 15 minutes before enjoying.
