Method
- In a mixing bowl, add the first 4 ingredients, mix gently for about 30 seconds.
- In a measuring cup, put warm water. Add softened butter to warm water and allow butter to melt.
- Add water mixed with butter into the mixing bowl and stir until well combined.
- Add egg to mixing bowl and stir until well combined.
- Add the last 2 ½ cups of all purpose flour, one cup at a time, until well combined.
- Once well mixed and a little sticky looking, empty bowl onto a floured surface. Sprinkle a little extra flour on the top of the dough and allow it to sit uncovered for 10 minutes to rise.
- Once risen, roll the dough out into a rectangle and let it sit while you mix the Cream Cheese Filling.
- In a clean mixing bowl with whisk attachment, add softened cream cheese and granulated sugar. Allow the two ingredients to combine for 3 to 4 minutes until totally smooth and creamy.
- Add egg yolk, vanilla and lemon juice, mix until well combined.
- Spread Cream Cheese Filling onto dough rectangle. Then add blueberries on top of filling to desired look, spread them all around the rectangle.
- Next roll the dough loosely so as not to crush the blueberries.
- Cut the dough into 12 even pieces. Place each piece on the prepared baking sheet.
- Cover the pan with a dry towel and sit in a warm place for 45 minutes to allow the rolls to rise. Preheat the oven to 350 degrees while the rolls are rising.
- Remove dry towel, place in preheated oven to bake for 25 minutes.
- Remove from the oven and let it cool in the pan for about 5 minutes. If you love butter, feel free to baste your rolls with some melted butter.
- After the rolls are totally cooled, place in an airtight container and refrigerate.
Notes
Do not rush the rolls! Let them rise for the full amount of time, each time they need to rise. ONLY use fresh fruit because frozen or old fruit can be juicy and you will not want extra juice. When baking, pay attention to the doneness of the roll, if they are over cooked, they will appear to be very dry the first time you warm them after refrigerating.
