Chicken Noodle Soup

Course: Soup

Ingredients
  

  • 4 T of butter
  • 3 stalks of celery diced
  • 3 whole carrots peeled and sliced
  • 1 medium onion diced
  • 2 cloves of garlic
  • 7 cups of chicken broth
  • 1 chicken breast cubed
  • Salt and Pepper to taste
  • 2 t dried Italian Seasoning
  • 2 cups of your favorite noodles I personally love the bowtie pasta 🙂

Method
 

  1. In a skillet, melt butter over a medium heat.
  2. Sautee celery, carrots and onions in melted butter until onions are soft.
  3. Add in garlic and cook together until fragrant.
  4. Add in chicken broth, cubed chicken and seasonings.
  5. Let the mixture cook on medium heat until chicken breast is thoroughly cooked.
  6. Reduce heat to low and simmer for 30 minutes.
  7. Add in noodles and simmer until noodles are soft - about 8 to 10 minutes.
  8. Serve with your favorite crackers or cornbread.
