Ingredients
  

  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 cup molasses
  • 3 ½ cups all-purpose flour
  • ¾ tsp baking powder
  • ¾ tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp cloves
  • ½ tsp salt
  • 1 cup hot water

Method
 

  1. Preheat the oven to 350˚. Line a 9 x 9 baking pan with parchment paper.
  2. In a mixing bowl, add butter and sugar, mix until combined.
  3. Add large egg and molasses, mix until well combined.
  4. Sift together flour, baking powder, baking soda, cinnamon, ground ginger, cloves and salt. Add to wet ingredients in the mixing bowl and mix until combined. Dough will appear thick.
  5. Add hot water and mix until batter is smooth and no lumps.
  6. Pour into the prepared 9 x 9 baking pan.
  7. Place in a preheated oven and bake for 30 to 45 minutes, until the toothpick comes out clear.
  8. Serve warm or cooled. Store in an airtight container for maximum freshness.

Notes

Best served warm with fresh whipped cream.
