Ole Fashioned Teacakes

Ingredients
  

  • 1 cup of softened butter
  • 2 cups of granulated sugar
  • 3 eggs
  • 2 T of buttermilk
  • 1 T of vanilla extract
  • 5 cups of all purpose flour
  • 1 tsp baking soda

Method
 

  1. Cream margarine until fluffy; gradually add sugar, beating well.
  2. Add eggs one at a time and beat well after each addition.
  3. Add buttermilk and vanilla.
  4. Combine flour and baking soda and add to cream mixture (small mounts and mix well after each addition.
  5. Blend very well.
  6. Divide dough into 4 equal balls, place in an airtight container and chill in the refrigerator overnight.
  7. Preheat the oven to 400 degrees.
  8. Line baking pans with parchment paper.
  9. Roll dough out onto a floured surface to desired thickness - ¼’ or thicker.
  10. Cut with desired cookie cutter.
  11. Bake only to light brown which is about 7 minutes - DO NOT OVER BAKE!
  12. Place on wax paper to cool.

Notes

Remember, this recipe does need to sit over night. When it's time to bake, do NOT over bake.
