Method
- Cream margarine until fluffy; gradually add sugar, beating well.
- Add eggs one at a time and beat well after each addition.
- Add buttermilk and vanilla.
- Combine flour and baking soda and add to cream mixture (small mounts and mix well after each addition.
- Blend very well.
- Divide dough into 4 equal balls, place in an airtight container and chill in the refrigerator overnight.
- Preheat the oven to 400 degrees.
- Line baking pans with parchment paper.
- Roll dough out onto a floured surface to desired thickness - ¼’ or thicker.
- Cut with desired cookie cutter.
- Bake only to light brown which is about 7 minutes - DO NOT OVER BAKE!
- Place on wax paper to cool.
Notes
Remember, this recipe does need to sit over night. When it's time to bake, do NOT over bake.
